omg okay 1: this is so sweet. holy gods it is sweet. 2: I'm having to convince myself that the roasted unsalted cashews are not, in fact, walnuts. texture-wise they're basically identical. i'm very pleased with that, even if I'm having to suppress an "ick, walnuts" since after all _they are not walnuts_ and do not taste like them. it's just the texture. 3: @annathepiper@mastodon.murkworks.net reports a whipped cream topping (which is suggested) definitely helps cut the sweetness. I think a tart fruit spread would also be delightful because _dang_ this is sweet 4: I like it tho'. It's really quite good. Just very sweet. 5: More later it's time for #UltraQ and #Ultraman and the #monsterdon preshow :D #baking #FoodForTheGods

[ghost host voice] is this weird 19th century dessert _actually rising_? or is it just your imagination? [/ghost host voice] #baking #FoodForTheGods

For the record, this is _not_ the more modern descendant recipe of this and similar recipes, which I understand is more cake like and is also a huge favourite in the Philippines and probably other places. This is a modern interpretation attempting to fill in the assumption gaps of 19th century recipes - where they leave out stuff and just assume you'll know what to do - and is more of a pudding in the UK sense. #baking #FoodForTheGods

I was really quite worried. Now, we aren't actually done yet! This has a rather convoluted cooling routine which starts with leaving it in the oven for another 30 minutes with the door slightly ajar. That's happening now. Clearly, it cools best _slowly_. After that, we have another 20 minutes of cooling still in the pan but on a rack. #baking #FoodForTheGods
